Profile & flavour
It is true that manipulating the profile adjusts the flavour - in the short as well as the longer term. Having said that it is also worth noting that the flavour profile will always remain dependent on temperature right up to the point of crossing your lips.
I presume that is what makes coffee so intriguing and never boring. I get the impression that the Sonofresco ADR allows for profile manipulation way beyond what i can appreciate and the taste buds can interpret. So still a lot to learn, but there is an element of frustration on the American that the Brit doesn't bear - limited control. The IKAWA allows for total control whereas the Sonofresco prevents change to the end time and anything different in that regards need to be instigated manually by the operator.
